Recipe for the Boûkètes■ Ingredients(for 10 to 15 boûkètes) - 200 g buckwheat flour. - 20 g baker's yeast. - 5 eggs. - 50 ml milk. - 25 g melted butter. - 1 pinch of cinnamon. - 1 teaspoon of fine granulated sugar. - 50 g raisins. - 10 cl peanut oil. - Blonde cassonade sugar. - Salt ■ Preparation- Separate egg whites from egg yolks. - Whisk the egg whites with a pinch of salt. - Slightly heat the milk. Fill a cup with warm milk and mix with the crumbled yeast. - Pour the flour into a large bowl. Make a hole in the middle and add gradually while kneading the dough with the fingertips, the dissolved yeast, the remaining milk, the melted butter and the sugar. Mix well. - Then add a pinch of salt, the egg yolks and the cinnamon. - When the preparation is well homogeneous, add the whisked egg whites and the raisins. - Cover the bowl and rest the dough near a heat source for 4 hours. It must double in volume. - Then bake the boûkètes in an oil-greased pancake pan. - Eat with brown or white sugar. Enjoy your food.
