Beef Rendang, a traditional Indonesian curry, is a testament to the country's diverse culinary traditions. Making your own Beef Rendang at home is a rewarding experience. Follow our simple recipe to recreate the authentic taste of Indonesia in your own kitchen. Ingredients:- 1 kg beef, cut into bite-sized pieces - 400ml coconut milk - 2 lemongrass stalks, bruised - 4 kaffir lime leaves - 2 turmeric leaves (optional) - 4 tablespoon cooking oil - 2 tablespoon tamarind paste - Salt to taste For the spice paste (Rendang paste):- 8 shallots, peeled - 6 cloves garlic, peeled - 5 red chillies - 3 bird's eye chillies (optional, for extra heat) - 1 thumb-sized piece of ginger, peeled - 1 thumb-sized piece of galangal, peeled - 2 thumb-sized pieces of fresh turmeric, peeled (or 2 teaspoon ground turmeric) - 2 stalks lemongrass, white part only - 1 teaspoon ground coriander - 1 teaspoon ground cumin - 1/2 teaspoon ground nutmeg - 1/2 teaspoon ground cloves Instructions:1. In a mortar, add all the ingredients for the spice paste. Grind them together using a pestle until they form a smooth paste. Or you can use a blender or food processor. 2. Heat the cooking oil in a large pot over medium heat. Add the spice paste and sauté until fragrant, about 5 minutes. 3. Add the beef to the pot and stir to coat it with the spice paste. 4. Pour in the coconut milk, tamarind paste, lemongrass stalks, kaffir lime leaves and turmeric leaves (if using). Stir to combine. 5. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for 2-3 hours, stirring occasionally, until the beef is tender and the sauce has thickened. 6. Once the beef is cooked, uncover the pot and continue to simmer, stirring frequently, until the sauce has reduced and thickened further. Season with salt to taste. 7. Serve the Beef Rendang hot with steamed rice or coconut rice. Garnish with sliced red chillies and fried shallots, if desired.
