Pad Thai, a stir-fried noodle dish, captures the heart of Thai cuisine. Born from Thailand's dynamic street food scene, it's now a cherished classic among foodies worldwide. Creating your own Pad Thai at home is a breeze. Follow our easy recipe to whip up a mouthwatering dish that will whisk you away to the lively streets of Bangkok. Ingredients:- 200g rice noodles - 200g shrimp, peeled and deveined (or chicken/tofu for vegetarian option) - 2 eggs, lightly beaten - 2 cloves garlic, minced - 2 shallots, finely chopped - 100g firm tofu, diced - 1 cup bean sprouts - 3 tablespoon vegetable oil - 2 tablespoon crushed peanuts - 2 tablespoon chopped green onions - Lime wedges, for serving For the sauce:- 3 tablespoon tamarind paste - 3 tablespoon fish sauce - 2 tablespoon palm sugar (or brown sugar) - 1 tablespoon soy sauce - 1/2 teaspoon chili flakes (adjust to taste) Instructions:1. Start by soaking the rice noodles in hot water until they are soft but still slightly firm. Drain and set aside. 2. In a small bowl, mix together the ingredients for the sauce: tamarind paste, fish sauce, palm sugar, soy sauce and chili flakes. Set aside. 3. Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes on each side until they turn pink and opaque. Remove from the wok and set aside. 4. In the same wok, add another tablespoon of vegetable oil. Add the minced garlic and shallots, and sauté until fragrant. 5. Push the garlic and shallots to one side of the wok and pour the beaten eggs into the empty space. Scramble the eggs until they are fully cooked, then mix them with the garlic and shallots. 6. Add the diced tofu to the wok and stir-fry for another 2-3 minutes until it starts to brown slightly. 7. Add the soaked rice noodles to the wok, followed by the prepared sauce. Use tongs to toss everything together until the noodles are evenly coated in the sauce. 8. Add the cooked shrimp back into the wok, along with the bean sprouts. Stir-fry for another 2-3 minutes until everything is heated through. 9. Remove the wok from the heat and sprinkle the Pad Thai with crushed peanuts and chopped green onions. 10.
